Mrs. Keck’s Glory Cake1-1/4 - cups sugar 1 - cup cake flour 1 - teaspoon cream tartar 7 - eggs, beaten separately 1/2 - teaspoon almond extract 1/2 - teaspoon vanilla 1/2 - teaspoon orange extract Icing 2 - cups confectioner’s sugar 2 - Tablespoon butter Cream 1/2 - teaspoon almond extract 1 - Tablespoon orange juice 1 - orange, grated rind Preheat oven to 325° F. Grease & flour large tube pan. * Sift sugar and flour 4 times. * In a mixing bowl, beat egg whites with a wire whisk. * When stiff, slowly add sugar and beat constantly. * Beat egg yolks lightly in bowl, sift in flour and cream tartar and stir together. * Fold in egg withies and sugar mixture. * Add flavoring. * Pour into tube pan. * Bake for 60 minutes. * When the cake is cool, begin to make the icing. * In a mixing bowl, cream butter and sugar and add enough cream to make a free-spreading mixture. * Stir in grated orange peel and add almond extract and orange juice. * Spread thickly on cake.
