Pork & Apple Butterfly Steaks
4 lean pork butterfly or loin steaks cracked black pepper, to taste 1 Spanish (purple) onion, thinly sliced 1 Granny Smith apple, cored and thinly sliced 3/4 cup white wine 4 slices swiss style cheese 4 baked potatoes, for serving
In a non stick frypan brown pork on both sides. Season with black pepper, remove and keep warm. Cook onion in pan until softened. Add the apple and wine to the pan and simmer for 5 minutes or until reduced by half. Return steaks to pan and top each steak with onion and apple and a slice of cheese. Cover and simmer until cheese melts. Serve steaks with baked potatoes.
