Hot German Potato SaladMakes 6 servings 2 lb Small red-skin potatoes 3 slices Pork bacon 60 g Green onions, chopped 1 1/2 tbsp Grainy Dijon mustard 1 tbsp Cider vinegar 1 tsp Olive oil 1 tsp Dill weed, dried 1/2 tsp Salt 1/2 tsp Pepper 1. Scrub potatoes and place in a large pot. Add just enough water to cover the potatoes. Sprinkle with salt and bring to a boil over high heat. Reduce heat to low and simmer for 25 minutes or until tender. Drain and set aside to cool. When cool enough to handle cut into 1" (about 2.5 cm) cubes. 2. Dice bacon & cook in a large non-stick frypan over medium heat until crispy. Add green onions and potatoes. 3. Stir the remaining ingredients together, drizzle over the potato mixture and toss gently to coat. Heat over medium heat stirring occasionally for 3-4 minutes, or until heated through. 4. Transfer to a serving dish and serve hot.
