Summer Ambrosia Slice
from Australian Family Circle January 2006
Serves 6-8
1 banana 1 cup sour cream 125g butter, softened 220g (1cup) caster sugar, plus 2 tablespoons extra 2 eggs, lightly beaten 300g (2 cups) self-raising flour 1 cup roughly chopped mango flesh
Icing 400g cream cheese, softened 50g butter, softened 100ml Greek yoghurt 80g (1/2 cup) icing sugar, sifted 1/4 cup passionfruit pulp 1 tablespoon lemon juice
Preheat the oven to 180oC (fan-forced). Line a 20cm x 30cm (base measurement) x 4cm lamington tin with non-stick baking paper. Lightly grease with butter.
Use a fork to mash the banana in a bowl. Stir through the sour cream.
In a separate bowl, use electric beaters to beat the butter and sugar for 2-3 minutes. Add the eggs and beat for 2 minutes until well combined. Stir in half the banana mixture, then half the flour. Repeat with remaining banana mixture and flour.
Fold in the mango and spoon the mixture into the prepared tray. Bake in the preheated oven for 45 minutes, until golden and a skewer inserted into the centre of the slice comes out clean. Set aside to cool.
To make the icing, use electric beaters to beat the cream cheese and butter for 2-3 minutes, until creamy. Add the yoghurt and icing sugar and beat until smooth. Fold in the passionfruit and lemon juice. Spread the icing over the slice and chill in the fridge until ready to serve.
(Great for left over yoghurt.)
