Lemoncurd pancakesas heard on the 774 Drive Programme Serves 4 Degree of difficulty: Low You need: Pancakes 11/4 cups plain flour 3 beaten eggs 11/2 cups milk 2 tspns melted butter pinch salt Lemoncurd 3 eggs 2 lemons - zest and juice 100g butter 175g castor sugar Method: Pancakes Sift flour in bowl with salt. Add milk, butter and eggs. Whisk until smooth. Strain. Rest for at least an hour in the fridge. The mixture should be the consistency of pouring cream, if a little thick, thin down with more milk. Cook pancakes in a in lightly buttered pancake pan, until lightly golden on each side. Lemon Curd Combine lemon juice, zest, sugar and butter in a non-corrosive saucepan. Stir as it heats and sugar dissolves. Whisk in eggs off the heat. Return to the stove and cook gently until the mixture coats the back of a spoon. Do not allow to boil. Cool and refrigerate. Serving Suggestion: Spread lemon curd on pancakes. Roll into cigars. Place 3 pancakes rolls on each plate.
