"Extremely Delicious Kumquat or Mandarin Cordial This is very easy to make, and so delicious I'm astounded that I invented it. I've been trying to come up with a really good citrus cordial for years. But this is lovely stuff: just slightly bitter and not too sweet but as no pulp is cooked there's no marmalade taste. Slice 2 cups kumquats or mandarins in a bowl. Add two cups sugar and leave till it's liquid - about 4 hours with the occasional bash with a spoon. Drain out liquid and add two scant teaspoons of tartaric acid to it and boil three minutes. "Berry Icy Poles Serves / Makes: 12 Great for kids parties Ideal for after school on hot days 5 cups apple juice 1/3 cup plain yoghurt 1 1/2 cups Creative Gourmet frozen Raspberries, thawed Whisk apple juice and yoghurt together until smooth. Pour half the mixture into the base of 12 paper drinking cups (90mLcapacity approx.). Partially freeze then insert a wooden paddle pop stick into the centre of each one and freeze until firm. Puree raspberries and spoon on top of apple mixture. Freeze until firm. Cover raspberries with remaining apple mixture and return Icy Poles to the freezer.Freeze overnight or longer When required carefully remove paper cups and serve." Br, the berry ice poles sound so refreshing. My kids would love these. So I am going to print this one out and use it when summer arrives. It will be a great treat, I think. Our fav summertime refresher is: Strawberry Lemonade 4 cups water 1 cup lemon juice 2/3 cups sugar 1/2 cup frozen or fresh berries** Stir sugar in water and lemon juice until sugar is dissolved. Add berries. Chill and enjoy. ** I used more berries and mine were partially frozen. So you might want to whirl this mixture around in your blender. Just tweak to your/your family's taste. Another one we like is Strawberry Crush 1 20 ounce bag frozen unsweetned strawberries 1 8 ounce container low fat strawberry yougurt 3 Tbsp powdered sugar Blend frozen berries until they resemble shaved ice.* Add yogurt and sugar and serve immediately. Makes 4 servings. *I partially thaw my berries. We just like it better this way. Just for fun, I serve these in mix and match old tumblers. My kids love it when I offer them an assortment of garnishes....like a sprig of mint frozen in the ice cubes, orange zest strips dipped in sugar (they look frosted) or berries threaded onto skewers. Sometimes I'll even pick them up a package of those little umbrella picks for decoration. They think they are the big cheese then! I'll post another fav when I can dig it out. Hope you cool off, BR.
