"Crab Omelette Serving size: Serves 2 Cooking time: Less than 15 minutes INGREDIENTS 4 eggs Pinch white pepper Drizzle of sesame oil 200g crab meat Approx ½ cup bean sprouts, trimmed Small handful snow pea sprouts ¼ cup snipped flowering chives 1 tablespoon peanut oil ¼ cup oyster sauce warmed with 2 tablespoons chicken stock Coriander sprigs METHOD Beat eggs with pepper and sesame oil. Mix together crab meat, sprouts and chives. Heat oil in a wok or omelette pan. Pour in beaten eggs. Gently draw the outside of the eggs into the centre of the wok until nearly set. Place crab mixture into the middle of the omelette and fold in half. Slide onto a plate and drizzle over oyster sauce mixture. Serve immediately garnished with coriander."
