Mexican Beef and Potato Bake Preparation technique Stovetop & Oven Preparation time 15 minutes Cooking Time 15 minutes & 30 mins baking time Serves 6 - 8 Ingredients 1 litre (4-5 cups )Campbell's Real Stock - Beef, or water plus beef bullion cubes 8 medium potatoes (3lbs), peeled, cut in 1cm slices 1 tbsp oil 1 medium onion, diced 1 small red or green capsicum, diced 2lb lean beef mince/hamburger 1 tbsp Mexican Chilli Powder seasoning* 2 tbsp tomato paste/puree 300g (10oz) tin red kidney beans, rinsed and drained 2 cups grated tasty cheese Method Place stock into a saucepan and bring to the boil. Reduce heat then add sliced potatoes into simmering stock and cook for 8-10 minutes until just tender. Remove potatoes with a slotted spoon and reserve 1 ½ cups of the remaining stock for mince mixture. Meanwhile heat oil in a large saucepan and cook onion and capsicum for 5 minutes. Add mince and cook for 5 minutes until well browned. Add dry chilli mix and tomato paste and stir to combine well. Add reserved stock, bring to the boil, then reduce heat and simmer for 15 minutes. Stir in kidney beans. Layer half the sliced potatoes in a lightly greased 2 Litre ovenproof baking dish. Top with half the mince mixture. Sprinkle a little of the grated cheese over the mince. Top with remaining potatoes, mince then cheese. Bake at 200°C/over 350oF for 30-35 minutes until golden brown. Rest in baking dish for 5 minutes before serving. Serve with guacamole** and sour cream and a side salad. *Make your own Mexican Chilli Seasoning by combining 1 teaspoon each of ground chilli powder, ground oregano, ground paprika, ground cumin and garlic granules.

Aw, your menus always make me very jealous, Br! Cooking dinner tonight I thought, I must make more of an effort. Then they ate everything, pronounced it good, and I thought well, go figure!
5th January - Barbecued steak and sausages, salad, fruit 6th January - Home made lamb souvlaki with yoghurt sauce, lettuce and tomato. Fruit. 7th January - chicken breast fillets tossed in garlic and breadcrumbs, served on a bed of spinach and flavored rice. Fruit. 8th January - Grilled fish (bought), chips (fries), eggs, spinach, fruit. 9th " - Zucchini/onion/minced meat burgers, scalloped potatoes, "red" pasta (pasta with a tomato sauce), asparagus, fruit. 10th January - Butter chicken, rice, salad, fruit. 11th " - probably lasagna
Whew, that was hard!

7 January - Baked beans with saveloys/bacon, pasta salad (with capsicum, onion, etc)
8 January - Steak (Alister), Chicken Cordon Bleu (me), homemade oven chips, tomatoes/onion/cucumber in vinagarette dressing, grilled courgette/zuchini, grilled mushroom
9 January - Lamb Chops (Alister), Chicken Cordon Bleu (me), mashed veges (potato, kumara, carrot and broccoli with cream cheese, butter, milk, powder Hidden Valley Ranch dressing), green beans
10 January (I'm at work) - Chicken, bacon and Vege burritos with Ranch Dressing/parmesan
11 January - Steak (Alister), roasted potato and kumara salad with 1000 Island/Cajun dressing, green salad
12 January (I'm at work) - BBQ Mince and veges (potato, kumara, carrot, onion) on toast, with cheese
13 January - Crumbed fish, homemade chips, cole slaw or green salad
14 January - Baked chicken, vege mash, steamed veges
15 January (I'm at work) - "pea pie pud" - meat pies (think a thicker version of pot pie, Americans), mashed potatoes and frozen mint peas ---- I'm not a huge fan of this meal, so I will prepare a bagel with Ranch dressing or just mayo, parmesan, lettuce, tomato and smoked chicken

Alister LOVES lamb chops - second only to loving steak. He's definitely a major red meat eater - I'm at least getting him to eat slightly smaller portions!
Me, I can't stand lamb chops! You?

Um, I love Worcestershire sauce, so I get to have it with chops, I let others pick over the bones. It all goes down well with greek salad and chips.

MV, we love souvlaki, only we usually do it with chicken for some reason.
All our menus are similar. It was so hot eating our goulash, it was one of those packet mixes.

OK with all that is going on this month in our house my menu will be plain, simple and nutritious (somewhat) Mostly just suppers since Daniel is back at school and Don will be working most of the time. So I'll just be doing my regular left overs, or boca burgers
