Mexican food has become very popular in Australia after the El Paso foods were introduced.
Off topic I grew up with alot of Spanish people.
Cabbage, I wonder if I have posted our recipe for bigos?
I am learning how to use pinto beans but them seem alot like kidney beans, very soft. I also have been experimenting with black beans. Not common beans here at least in the country or remote areas.
I like the charro beans recipe. Will print that, it is hard to copy with the extra bits of information etc.
While looking for bigos I found this recipe for Lamb in Cabbage.

Bigos
This is a quick recipe. Take a cup of shredded cabbage and start slowly sautéing, when it is soft and cooked (about 10 minutes) add a 3/4 of a cup of sauerkraut. Cut into small chunks your rookwurst and also add to the pan. Turn the heat up, Cook for about 10 minutes, stir so not to burn the cabbage, add a couple of spoons of tomato sauce or ketchup, salt 7 pepper to taste, cook another 3-5 minutes.. Taste better on a cold day. Just like, we are having today. This is an extremely simplified recipe of Polish Bigos/Bigus.
P.S. Some mashed potato on a side is an added bonus.

Chow Mein
(Serves 4-5 people)
2 tbs oil
1 dessertspoon curry powder
3-4 sticks celery
1/2lb beans
1 pkt chicken noodle soup
1 onion, chopped
500g hamburger
1/2 cabbage, sliced
1 teaspoon mixed herbs, optional
1 tablespoon tomato ketchup
1 teaspoon worcestershire sauce
1 tsp salt
Warm oil and fry meat. Add onions when done add curry, stir for a minute. Add soup and water. Place all vegetables into the mixture with cabbage on top and cook for around 30 minutes, stirring occasionally. Serve with rice and soy sauce or ketchup. Can add pineapple pieces.
New Ingredient: corn chips.
