This show is just a joy to watch. We catch it at around 6pm on Wednesdays. My husband and I both love it.
This week it was Singapore, and I just loved the lady, and I love the kitchens of the families.

"Poh pia
A typical Asian meal might consist of three dishes, of which Poh pia could be one, to feed a family of four to six people.
Ingredients
1 packet ready-made spring roll sheets
Filling:
2 cloves garlic, minced
3 tablespoons canola or other vegetable oil (not olive oil)
1 large mung guang*, the size of a grape fruit, peeled and grated
440 g tin bamboo shoots, julienned
2 tablespoons kecap manis
1 tablespoon dark soy sauce
1 teaspoon salt
* Mung guang is a yam bean or Chinese sweet turnip. They are available from specialist greengrocers.
Garnish:
3 eggs
100 g bean shoots, blanched
5 iceberg lettuce leaves, cut in fine strips
½ kg green prawns, boiled, shelled, deveined, and cut in half lengthwise
2 strips cooked belly pork, with skin on, about 10 cm long and 2 cm thick, cut in fine strips
2 Lebanese cucumbers, peeled and cut into fine julienne.
Fine leaves and stems from a small bunch of coriander
1 small packet fried shallots*
red chillies, finely chopped
* Available from specialist Asian grocers
Sauce:
60 mL hoi sin sauce
60 mL kecap manis
2 tablespoons water
2 tablespoons garlic black bean sauce
2 tablespoons sugar
Method
For the filling:
1. Fry garlic in oil over medium heat for a few seconds.
2. Add the mung guang and bamboo shoots with all the other ingredients and cook for 2 minutes. Add a little water if too dry but mixture must be moist with no liquid running out of it.
For the garnish:
3. Make egg strips from a very thin omelette using the eggs. Cut folded omelette into fine strips 10 cm x 0.5 cm. (Tip – Rub the wok with oil first; if there is a puddle of oil at the bottom you can't make a thin omelette. Use only 3 eggs or the omelette will be too thick.)
4. Simmer in water till soft, then sliced thinly.
5. Prepare all other ingredients as described in ingredients list.
For the sauce:
6. Mix all ingredients together in a small saucepan and simmer gently until well mixed.
To assemble:
7. Put a spring roll sheet on a plate, smear with about 1 teaspoon of the sauce.
8. Spread 1 heaped tablespoon of filling into a "roll" across the sheet.
9. Choosing from the variety on offer, pile a small amount of garnish on top.
10. Add fried shallots and chillies to taste.
11. Fold sides of sheet over, then roll up. Pick up and eat, or cut into three sections to eat."
