Caramelised Pear Pancakes with Cinnamon Ricotta and Maple SyrupYou’ll need: 1 cup plain wholemeal flour 1 cup self-raising flour 1/2 cup castor sugar 3 teaspoons baking powder 2 teaspoons ground cinnamon 2 eggs 3/4 cup milk 1/2 cup Jalna vanilla yoghurt 2 pears 1/4 cup demerara sugar mixed with 1 teaspoon cinnamon Knob of butter for cooking Maple syrup and cinnamon ricotta to serve Here’s how: 1. Mix flours, castor sugar, baking powder and cinnamon in a bowl 2. Add eggs, milk and yoghurt and mix well 3. Leave mixture to stand while grating pears and preparing cinnamon ricotta 4. Heat frypan over a medium to low heat 5. Melt a teaspoon of butter in the frypan and brush butter over the pan 6. Place 1 heaped tablespoon of batter in the frypan for each pancake and allow mixture to spread 7. Scatter a small amount grated pear over each pancake and sprinkle with sugar and cinnamon mixture 8. When the pancakes start to rise and air bubbles appear on the surface flip them over and cook for approximately 2 minutes or until cooked through. Continue cooking the rest of the mixture, washing the pan if necessary part way through 9. Serve pancakes with a spoonful of cinnamon ricotta and a drizzle of maple syrup Cinnamon Ricotta You’ll need: 1 cup ricotta cheese 2 1/2 tablespoons honey 1 teaspoon ground cinnamon Here’s how: 1.
