Nettle SoupDon't worry - they don't sting when cooked! Nettles are very nutrient rich and of course - free! Don't gather them beside a busy road where they will have been contaminated by traffic fumes. If you keep cutting them from springtime you get a regular supply of fresh leaves, though they can get a bit insect infested during the summer! Ingredients: 2 tablespoons of vegetable margarine or oil 2 tablespoons of white flour 1 onion, roughly chopped 2 cloves garlic, chopped Freshly picked and washed young nettles (several good handfuls - picked with gloves and caution!) 2 cups soya milk (tesco value is cheap and organic too) 1 cup water or stock salt and pepper to taste Fry the onion and garlic in the oil or marg. for a few minutes then stir in the nettles (no need to chop or remove stalks) until they soften. Stir in the flour and gradually add the soya milk and water or stock, stirring all the time. Add seasonings and liquidise. Delicious... From: www.frugal.org.uk/nettle.html

I'm really sorry about your nettles cupcake. Mine are growing in a pot, and the few that were weeded out before them. I hope your new ones grow well for you. Hopefully the mint will grow quickly too.

Nettle Tea with Lemon Balm and MintServes 2 I find this tonic tea is tasty any time of day as a light pick-me-up. It is soothing to the digestive tract about an hour after a meal, and sometimes we will have a cup an hour or so before bedtime to relax. 2 cups water Generous ⅓ cup nettles Generous ⅓ cup lemon balm (Melissa officinalis) Scant ⅓ cup spearmint (Mentha spicata) Bring water just to a boil. Rinse teapot with warm water and place herbs in warm teapot. Add boiling water and cover. Steep 5 to 10 minutes; strain and drink hot. Oh that sounds really nice. I do have some lemon balm growing. I found a little patch of nettles growing near the entrance of the yard. Really in the wrong place and in direct sun so they are not as healthy as the ones I had. But at least I can try this tea. Yum. I will do it tomorrow. Thanks for sharing.

Hopefully I am not doubling up here. NETTLE AND HEDGEROW HERB DUMPLINGS Dumplings are a serviously underrated way of providing starch to accompany a good stew. Ingredients # 125g self-raising flour # 125g fresh breadcrumbs # 125g suet # a small bunch each of wild chives and wild chervil (or use parsley), finely chopped # 12 finely chopped young nettle crowns (top few leaves) # a little salt and pepper # two lightly beaten eggs Method Mix together 125g self-raising flour, 125g fresh breadcrumbs, 125g suet, a small bunch each of wild chives and wild chervil (or use parsley), finely chopped, 12 finely chopped young nettle crowns (top few leaves) and a little salt and pepper. Make a well in the centre and add two lightly beaten eggs. Mix with a fork, then knead lightly to form a dough, adding a little more flour if it is too wet. Shape into 12 round dumplings. Cook them on top of your stew, with the lid on, for the last 25 minutes of cooking time.
