I agreed to make several dozen cookies for our church for camp. I came home today, to discover I was down to less than 3 cups of sugar left (not sure how THAT happened) and an airconditioner that was not functional.
My solution?
I delved deep in my pantry and came up with enough goodies to make:
3 dozen no bake chocolate S'Mores cookies
3 1/2 dozen fake Girl Scout thin mint cookies (also no bake)

I don't know. 3 cups sounds like a bit though.
Last night I had to do a work around for paella, we had chorizos and I couldn't remember what I was going to make with them if anything, we also had minced or ground chicken. So we made paella with chorizos and minced chicken instead of bbq chicken and kabana. Everyone ate it except g. but I think she snacks alot before her meal.
I might do it again, since cooked chicken goes off quicker than frozen ground chicken.

I looked in my biscuit book and there were some, all had less than that amount of sugar, I guess they are a different style.
I will check the no cook ones.
No bake is a challenge. We had a similar thing happen before a party last week. Lucky we had dried apriocots.
It is not too bad if you have a packet of store bought biscuits to crush or vegetable shortening or something.
What did you put into the smores and mint cookies?

S'More cookies (no bake)
2 cups granulated sugar 1/2 cup milk 8 tablespoons (1 stick) margarine or butter 1/3 cup Baking Cocoa 3 cups Oats (quick or old fashioned, uncooked) 1/4 cup chopped peanuts 1/4 cup Semi-Sweet Chocolate Morsels (optional) 2 cups mini marshmallows
1. In large saucepan, combine sugar, milk, margarine and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes. Remove from heat. 2. Stir in oats, peanuts, chocolate morsels and marshmallows; mix well. 3. Quickly drop by tablespoonfuls onto waxed paper or greased cookie sheet. Let stand until set. Store tightly covered at room temperature.
Makes about 3 dozen.
Microwave Directions: Place sugar, milk, margarine and cocoa in medium microwaveable bowl. Microwave on HIGH 1 to 2 minutes or until mixture is melted and smooth, stirring every 30 seconds. Proceed as recipe directs.
Faux Girl Scout Thin Mints
"These taste like the Girl Scout Thin Mints." - Submitted by Cori Walkden of Greenville, North Carolina
6 ounces chocolate candy coating* 12 to 18 drops peppermint oil flavoring 1 sleeve buttery round crackers
1. Melt chocolate candy coating in double boiler. 2. Add peppermint oil to taste minty enough to your liking. 3. Dip Ritz crackers in chocolate and place on waxed paper to solidify.
Makes about 36.
*Note: You can substitute with 6 ounces chocolate melted and 1 tablespoon vegetable shortening.

BTW- I had promised at least 6 dozen cookies, since some of our church members are on vacation , and some are sick.

You are one smart cookie...no pun intended. I would have panicked for sure.
Those S'Mores are called Preacher Cookies here. I dunno' why. I made some once when my sister and I were teenagers. She ate so many they made her sick. She delights in still telling people my cooking made her sick.
