Cook a roast, so that I can slice it for lunch meat? I got a great deal on some roasts that were mismarked at the store today. (normally should have been $4.60/lb and they were marked at $1.99/lb) I grabbed 3 of them, intending to make roast beef lunch meat. Thanks for any help you can send my way.

I had a dear friend in Michigan that use to do this all the time. She prepared her roast in the oven the regular way...When it was finished she let it cool completely, and then sliced it on her meat slicer so she could get a nice thin slice. HTH

We have a meat slicer, but I wasn't sure if there was a certain way I should cook the meat. Mine generally gets so tender, it just wants to fall apart- very tasty that way, but not good for sandwich meat.

Me too Denise, so I have found that cooling completely ( and refridgerating overnight) really helps. It will be nice and firm to slice then.
