I realised I didn't have any sweetened condensed milk to top off the caramel squares I wanted to make, so I made the base as normal -
1C flour 1C raw sugar 1C dessicated coconut (I used slightly less) 125g melted butter
(mix-up, press into baking tin and bake 180C for 10mins)
then I added the topping from a recipe for "chocolate crispy bites"
50g butter 2T golden syrup 125g dark chocolate 75g toasted rice cereal
Place in the refridgerator to chill until hardened. They were quite difficult to slice so I recommend taking them out of the fridge the day before serving and putting in a container.
I ended up getting some not-too-messy slices into a container and they were a hit at the function I went to this morning! Phew! ;D
