Light Summer Sandwich Good looking and good for you … this sandwich is nourishing and delicious. Serves 4. Prep Time: 10 Minutes. Ingredients Turkish bread 1 x 200g punnet The Original™ grape tomatoes 1/2 rockmelon 8 slices proscuitto 1 Treviso™ radicchio pesto ground pepper & salt Cooking Instructions Cut the Turkish bread into four, then cut each piece in half. Toast the Turkish bread. Spread pesto on the inside of each piece of the toasted Turkish bread. Wash and dry the radicchio leaves and spread them on the bottom half of the bread. Place two slices of proscuitto on the radicchio leaves for each sandwich. Peel the rockmelon and cut it into thin slices across the diameter of the half melon. Place the slices of rockmelon on the proscuitto. Wash and cut The Original™ grape tomatoes in half and spread over the rockmelon. Season the tomatoes with ground pepper and salt.
