shredded yellow squash and zucchini minced onion and garlic shredded carrot Spaghetti sauce (or tomato sauce and Italian spices) Saute shredded zucchini, carrot, squash, chopped onion, garlic, until onions are clear. Add tomato sauce, simmer for at least a half hour, longer is better. Serve over pasta or rice.
