Carob is used as a substitute for chocolate.
5 oz butter 3/4 cup castor sugar 2/3 cup steamed, mashed potato (cool) 1/3 cup carob powder 2 eggs (lightly beaten) 1 cup rice flour 1/2 cup soy flour 2 tsp baking powder 1/2 cup milk Preheat oven to 350°F. Grease 8" cake pan. Cream butter and sugar in a large bowl. Add mashed potato, beat well. Gradually beat in eggs. Sift flours, baking powder and carob together. Fold in flour mixture alternately with milk, blend well. Pour into prepared tin and bake for 40 - 50 minutes.
