Zucchini Carrot Cake ( by DomesticGoddess )
2 eggs 1 cup sugar 2/3 cup vegetable oil 1 1/4 cup flour Pinch of salt 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1 cup grated, peeled carrots 1 cup peeled, grated zucchini, drained 1/2 cup chopped walnuts
In a mixing bowl, beat eggs with sugar till frothy. Gradually beat in vegetable oil. Add dry ingredients. Beat at high speed with electric mixer; for 4 minutes. Stir in carrots, zucchini and chopped walnuts. Pour in a greased 9-inch square baking pan. Bake at 350 degrees for about 35 minutes. Cool completely, then frost with the cream cheese frosting.
Cream Cheese Frosting: 1-( 3 ounce ) pkg. cream cheese, softened 3 tablespoons butter or margarine 1 teaspoon vanilla extract 2 cups powdered sugar
In a mixing bowl cream together, cream cheese, butter and vanilla extract. Gradually stir in the powdered sugar; mixing well. Frost cake. Refrigerate until it's time to serve cake.
