2 1/4 cups all-purpose flour 1 Tbsp. pumpkin pie spice 1 tsp. baking powder 1/2 tsp . salt 2 eggs 2 cups granulated sugar 1/4 cup vegetable oil 1/4 stick butter 1 cup solid pack pumpkin 1 cup chopped fresh cranberries 1/2 cup brown sugar 2 Tbsp. cinnamon Topping 1/2 cup sugar 1/3 cup flour 1/2 stick butter 1 Tbsp. finely chopped fresh cranberries 1/2 tsp. cinnamon In a large bowl, combine flour, pumpkin pie spice, baking soda, salt and cinnamon. In a small mixer bowl, beat eggs; beat in both sugars, oil and pumpkin Pour pumpkin mixture into dry ingredients; stir until moistened. Fold in cranberries. Spoon batter into 2 greased and floured 8x4-inch loaf pans. (If you use a different size, only fill the pans 1/2 full) Divide topping between the pans, spreading evenly over loaves. Bake in pre-heated 350°F. oven for 60 minutes or until cake tests clean. Cool for 10 minutes Remove from pans.
