NERADA SHEARER'S FRUIT TEA CAKE 370g (2 cups) mixed dried fruit 230g (1 1/4 cups packed) brown sugar 1 teaspoon mixed spice 250ml (1 cup) hot, strong brewed and strained Nerada tea 1 egg beaten 80 ml (4 tablespoons) golden syrup 520g (4 cups) Self Raising flour 1/2 teaspoon salt Put mixed fruit, brown sugar and spices into a large bowl cover and leave overnight. Next day pre-heat oven to 160C (325F). Grease a 20cm (8 inch) cake tin and line with oven paper. Add egg, golden syrup, flour and salt to fruit mixture and stir well. Pour mix into the prepared tin and bake for 1 - 1.5 hours until a skewer inserted into the centre comes out clean. Cool on a rack slice thinly and butter when cold.
