Chocolate Hedgehog "This is my grandmother's recipe - for years she ran a store selling cakes, biscuits, slices and pastries. It is absolutely delicious!! Ingredients 8 ounces butter 8 ounces white sugar 2 egg 4 tbsp cocoa 2 tsp vanilla essence 16 ounces crushed plain biscuits (a bit less than 2 packets of Marie biscuits) InstructionsMelt the butter over a gentle heat, adding the sugar, vanilla essence and cocoa until a smooth mixture. After the butter mixture has cooled a few minutes, add the beaten egg. Crush the biscuits using a rolling pin, leaving some larger pieces. It is good to do this on top of a sheet of newspaper to make moving the crushed biscuits easier and avoid making a mess. Press into an 11 x 7 inch biscuit tray, sprinkling and pressing desiccated coconut onto the top. Place in a refrigerator to set." Hmmm, from the title I wasn wondering where one would buy a hedgehog to dip in chocolate! LOL!
Now, biscuits - are those cookies here in the US?

They might be like graham crackers. Maries are used to crush and make cheesecake bases.
Maybe I will have to get some when I buy the grits to see if they are like Maries.
They are cookies, but not soft bake and pale.
