Apple-Almond Bars ( Recipe by DomesticGoddess )
2 c. flour 1/2 c. sugar 1/2 tsp. baking powder 1/2 tsp. salt 1 c. butter 1/2 c. sliced almonds 2 egg yolks, slightly beaten 3/4 c. sugar 1/4 c. flour 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 4 c. sliced apples, using either Rome, Golden Delicious, Granny Smith or Jonathan
In a large bowl, stir together the flour, sugar, baking powder and salt. Cut in butter, until pieces are the size of small peas. Stir in the almonds and eggs with a fork. Press half the mixture ( about 2 cups ) into the bottom of an ungreased 13x9x2-inch baking pan; set aside.
In a nother large bowl, stir together the 3/4 c. sugar, 1/4 c. flour, cinnamon and nutmeg. Add apples; toss to coat. Arrange evenly over mixture in pan. Sprinkle remaining crumb mixture, evenly over apple mixture. Bake in a 350 degree oven about 35 minutes, or until topping is golden brown. Cool completely. Drizzle with icing. Let stand until set. Cut into bars. Makes 24 bars.
Icing: In a small bowl, stir together 3/4 c. sifted powdered sugar, 1 1/2 Tbsp. milk, and 1/4 tsp. almond extract until smooth.
