1 cup (250 ml) whole wheat pastry flour 1 tsp. (5 ml) baking powder 1/2 tsp. (2 ml) salt 2 eggs 1/2 cup (125 ml) honey 1 tsp. (5 ml) vanilla extract 1 cup (250 ml) dates, chopped 1 cup (250 ml) carrots, shredded 1/2 cup (125 ml) walnuts, chopped In large bowl, mix flour, baking powder and salt. In small bowl, beat eggs, honey and vanilla until creamy. Add to flour mixture, stirring until well blended. Stir in dates, carrots and walnuts. Spoon into greased small baking pan, spread evenly. Bake in preheated 350° F (180° C) oven for 30 minutes. Cool completely on wire rack and cut into bars.
