Each week I am going to feature a recipe from "The Cookery"
That also means that the member that posted it gets to be chef of the week I guess you would say!
We can then ask them questions related to their recipe, their cooking, any question about food.
If anyone doesn't wish to participate let me know!
The Cookery has excellent recipes in it, they all look great.

Actually to make it more fun, you get to choose the next recipe when your turn is finished, just like on Member Of The Week.
So you look for the member or chef you want to feature and a recipe they have posted. Have fun!!

We will change over at the same time each week as we did for Member Of The Week. This first turn will be longer OK? First Chef Of The Week is Lynn!! Her featured recipe is: drum roll Lean Bean Salad « Thread Started on Nov 12, 2005, 9:32pm » -------------------------------------------------------------------------------- 16 oz garbanzo beans, canned 15 oz green beans, canned, french style 1/2 c chopped red onion 1 T dried parsley 1 T vegetable oil 1/4 c vinegar 2 T splenda or sugar 1 t garlic powder 1/2 t pepper 1/4 c parmesan cheese Drain beans well. Combine all other ingredients in a 2 quart salad bowl. Add beans. May be chilled or served immediately. Serving size: 2/3 cup for 5 points or 6 if you use the sugar instead of splenda. I don't know if I have had chickpeas and green beans together Lynn, but I love both.
Do you have chickpeas in other dishes as well? I read about a farmer in a food magazine last week, he and his son grow chickpeas.

I can only think of 2 at the moment, BR. One is for roasted chickpeas, the other for hummus.

hmm.....probably layer salad and then one my mom makes called Cornbread Salad. I try to stay away from it! LOL. Hard to stop at one spoonful. I like most salads including, spinach, cobb, apple and chef.

You are making me hungry Lynn. Although I have no idea what layer salad or cornbread salad is! Actually cob and chef are a mystery too. But it still made me hungry.

I'd be glad to share that recipe, Michelle. It is:
2 cups pre-cooked garbanzo beans ( I buy the canned ones)
3 heaping Tablespoons of sesame tahini (I've made my own by grinding sesame seeds in the blender with a touch of olive oil)
3 Tablespoons lemon juice
2 cloves garlic
1/2 teaspoon salt
1/2 - 3/4 cup water (adjust for desired consistency)
Put all in blender. Blend to thick paste. Garnish with paprika, parsley and EVOO.
Enjoy!

The ingredients in layer salads are layered hence the name "layer salad". You'd find a table full at nearly any southern summer dinner event. One of my favs is a layer of lettuce, bananas, raisins, bacon bits, diced green peppers, a mayo/vinegar/splenda dressing and topped with cheese. YUM!
Cobb Salad is a salad whose ingredients, like chopped hard boiled eggs and bacon, are arranged in rows rather than tossed together. Chef Salad is similar to that also.
Ahhh Cornbread Salad.....that's in a category all by itself....yummmmm.......
Poor Man's Caviar is another good one. It involves blackeyed peas, diced bell pepper, tomato, scallions, cilantro and a bottle of spicy italian dressing. Very easy to prepare and good for the summer.
