2 cans (14-1/2 ounces each) Chicken Broth 1 can (14-1/2 ounces) Diced Tomatoes in Juice 1 cup frozen corn 1-1/2 cups shredded cooked chicken 1 tsp red pepper sauce flavored with chipotle peppers tortilla chips, broken
Combine broth, tomatoes, and corn in a medium saucepan. Bring to a boil; reduce heat. Add chicken and red pepper sauce; simmer about 5 minutes. Top with tortilla chips. Garnish with cheese, green onions, cilantro, and avocado, if desired. Serve immediately. Use rotisserie chicken from grocer's deli for cooked chicken as an option for cooked chicken.
