1 tsp vegetable oil 2 cups chopped onion 3 garlic cloves -- minced 2 Tbls chili powder 1 1/2 Tbls ground cumin 1/2 tsp salt 2 cans stewed tomatoes undrained 2 cans black bean drained 1 Can kidney beans -- drained 1 Can pinto beans -- drained 1 Can White beans-- drained 1 Can Garbozo beans--drained 1 Can fat-free beef broth 1/2 cup water 1 Lg green bell pepper -- cut into 1" pieces 1 Lg red bell pepper -- cut into 1" pieces 1/2 cup fat-free sour cream 1/3 cup diced green bell pepper 1/3 cup diced red bell pepper
Heat oil in a large Dutch oven over medium-high heat. Add onion and garlic; saute 5 minutes or until tender. Stir in chili powder, cumin, and salt; saute 1 minute. Add tomatoes and next 7 ingredients; bring to a boil. Cover, reduce heat and simmer 30 minutes, stirring occasionally. Spoon chili into bowls; top each serving with 1 tablespoon sour cream. Sprinkle diced green and red bell peppers evenly over each serving.
Yield: 8 servings (serving size: 1 1/2 cups).
