1/2 cup finely chopped onion 1/4 cup butter 1/2 cup flour 4 cups milk 4 cups chicken broth 1/2 cup carrots, finely diced 1/2 cup celery, finely diced Dash of salt and paprika 1 cup sharp process American cheese, diced
Cook onion in butter until tender but not brown. Blend in flour. Add milk and broth, carrots, celery, salt and paprika. Cook and stir over medium heat until mixture thickens and bubbles. Reduce heat, add cheese; stir to melt. Simmer 15 minutes. Serve with small soup crackers.
