1 turkey carcass with meat attached 3 quarts water 2 large onions chopped in big pieces Salt and pepper to taste 1 16-oz. can of chopped tomatoes with juice 2 Tbsp. chicken bouillon granules 2 Tbsp. fresh chopped parsley 2 Tbsp. dried thyme 2 Tsp. oregano 1 cup chopped celery 1/2 cup chopped carrots 1/2 cup sliced fresh mushrooms 1/2 cup chopped broccoli 1/2 cup chopped cauliflower 1 cup chopped cabbage 1 cup uncooked rice (optional)
Break up turkey carcass and place in very large pot. Add water, one chopped onion and salt and pepper. Bring water to a boil then cover pot, reduce heat and simmer for about 1 and 1/2 hours. Remove turkey carcass and allow to cool. Remove meat from bones. Strain broth and discard pieces of bone and other little things you can't identify or just don't want to eat. Pour broth back into pot and add turkey meat, tomatoes with juice, chicken bouillon, parsley, thyme, oregano, the second onion and the veggies. Bring to a boil. Cover, reduce heat and simmer for about one hour. If you want to add rice, add it now and simmer for about 20 minutes or until rice is cooked.
The Skinny: Not much to do here. You can skim the fat from the broth after cooking the turkey Carcass.
