For the pecan harvest. Congo squares are actually blondies, or brownies without chocolate I think. CONGO SQUARES * 2 3/4 cups sifted flour * 2 1/2 teaspoon baking powder * 1/2 teaspoon salt * 2/3 cup butter (or margarine) * 2 1/4 cups light or dark brown sugar (1 pound package) * 3 eggs * 1 cup nutmeats, broken (walnuts or pecans or your choice) * 1 small package chocolate bits Melt shortening, add brown sugar stirring until well mixed, allow to cool. Can be transferred to mixer bowl at this point though I always just mix in pan in which I melted the shortening. Add eggs, one at a time, beating well after each addition. Add dry ingredients that have been sifted together, then nutmeats and chocolate. Bake in a greased 10- 1/2 x 15- 1/2 x 3/4- inch pan for 25-30 minutes in a 350 degree Fahrenheit oven. When almost cool cut into squares. Small for tiny paper cups or larger for cupcake size paper cups. From: www.jewish-food.org/recipes/congosqr.htm
