2 lbs. boiled potatoes salt and pepper 1/4 lb. butter 6 oz. grated Emmental cheese
Grate or roughly chop the boiled potatoes and season with salt and black pepper. Heat the butter in a large frying pan, add the potatoes and fry gently, turning frequently. After 15 minutes, mix in 4 ounces of cheese. Form the mixture into flat cakes and top with remaining cheese. Cover the pan until the cheese melts and the potatoes form a crust on the bottom. Serve with a salad or grilled meat.
