Sweet Chicken Curry Preparation time 10 minutes Cooking Time 15 minutes Serves 4 Ingredients 2 tbsp oil 1 large onion, sliced 1 small red capsicum, sliced 2-3 tsp mild curry powder 750g chicken fillet, cut into 4 cm strips 1 x 420g can Campbell's Condensed Cream of Pumpkin Soup 1 soup can water 175g baby green beans, sliced 1/4 cup sultanas salt & freshly ground pepper, to taste Method In a large saucepan over medium high heat, heat 1 tbsp oil. Add onion and capsicum and stir-fry 2 minutes or until tender crisp. Add curry powder and cook for a further minute. Remove and set aside. Heat remaining oil in the saucepan. Add chicken in two batches and stir-fry 4-5 minutes. Combine soup and water then add to the saucepan with onion mixture, green beans and sultanas. Bring to the boil.
