Cinnamon Swirl Quick Bread 1 1/2 c sugar (divided) 1 T cinnamon 2 c flour 1 tsp baking soda
1/2 tsp salt 1 c buttermilk (I NEVER use buttermilk: 1T vinegar or lemon juice + enough milk to = 1 cup) 1 egg 1/4 c veg. oil Combine 1/2 c sugar and cinnamon and set aside. Combine flour, b. soda, salt, and remaining sugar. Combine milk, egg and oil, stir into dry ingredients. Grease the bottom only of a 9x5 loaf pan. Pour half of the batter into the pan. Sprinkle with half of the cin-sugar mixture. Carefully spread remaining batter on top (I spoon it on as it is very thick). Sprinkle with remaining cin. sugar. Take a knife and drag it through the batter, to swirl. Bake at 350º for 45-60 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes then remove to wire rack and cool completely. You can top this with a glaze of 1/4 c confect. sugar and 2 tsp milk. This is VERY moist and rich, and very yummy. The top actually gets very crunchy

Sounds like a great recipe lynn, thanks. I like the addition of the oil, makes things so easy.
