3 pounds fresh green beans, ends snipped 1-2 small red onions, thinly sliced 10-12 thin slices prosciutto, cut into thin strips 3 / 4 cup extra virgin olive oil Juice of 2 lemons 1 Tbsp chopped fresh rosemary 1 / 2 tsp each: salt, crushed red pepper flakes Freshly ground black pepper
Heat a large pot of salted water to a boil. Meanwhile, fill a large bowl with ice water; set aside. Cook the beans in the boiling water until cooked but still slightly crunchy, about 1-2 minutes. Strain; plunge beans in ice water 2 minutes. Strain beans; transfer to a bowl. Refrigerate, covered, up to 1 day. Remove beans from the refrigerator 1 hour before serving; toss with onion and prosciutto. Toss with the oil, lemon, rosemary, salt, crushed red pepper flakes and black pepper to taste.
