Makes 6 Servings
Salad 1 1/2 C cabbage, grated 1/2 C oranges, sectioned and sliced 1/2 C grapes, halved 1/4 C celery, thinly sliced 1/2 C red apple, cored and diced 6 large whole lettuce leaves
Dressing 1/2 C non-fat yogurt 1/2 tsp. freshly grated lemon zest 1/2 tsp. lemon juice 1/2 tsp. honey
Combine all dressing ingredients and mix well. Toss together all salad ingredients except lettuce leaves. Just before serving, toss salad with dressing and place each serving on a lettuce leaf.
