2 16-oz cans refried beans 1 8-oz. package cream cheese, softened 1 tsp. ground cumin 1 16-oz. package frozen corn 2 cloves garlic, minced 1/2 cup fresh cilantro 2 fresh tomatoes, chopped 1 small sweet onion, chopped 1 jalapeno pepper, seeded and chopped Juice of 1 lime Salt and pepper to taste 8 oz. Monterey Jack cheese, shredded
Combine refried beans, cream cheese and cumin and mix well. Spread on the bottom of a greased 8 x 8-inch baking dish. Saute corn and garlic in a saucepan for a few minutes and then remove from heat and reserve. Combine cilantro, tomatoes, onion, pepper, limejuice and salt and pepper and mix well. Place corn and garlic mixture in with tomato mixture and mix well. Place evenly over bean mixture and sprinkle with cheese. Bake at 350°F. for about 15 - 20 minutes. Serve with tortilla chips.
The Skinny: Use light cream cheese.
