12 medium potatoes, peeled & cubed 2 Cups (8-ozs.) shredded Cheddar cheese or Swiss cheese, divided 1 1/4 C milk 1/3 C. butter or margarine, softened 1-2 t. salt 2 eggs, beaten
Place the potatoes in a saucepan & cover with water; cover & bring to a boil. Cook until tender, about 15-20 minutes. Drain & mash. Add 1-3/4 Cups cheese, milk, butter & salt; Cook & stir over low heat until cheese & butter melt. Fold in eggs, spread into a greased 13 x 9 inch baking dish. Bake uncovered at 350° for 25-30 minutes. Sprinkle with remaining cheese. Bake 5 minutes longer or until golden brown.
