Olive oil 8 slices spinach-herb or favorite Italian bread 1/2 pound baked Virginia ham, sliced 1/2 pound sliced Swiss cheese Dijon mustard 1/2 cup roasted peppers, optional 1 teaspoon snipped chives Fresh parsley
Brush 4 slices of sliced bread with oil, then top with the smoked ham and cheese. Sprinkle with chives and fresh parsley. Add mustard, roasted peppers, chives and fresh parsley, if desired. Top each with bread, brush with oil. Heat a panini grill until hot and grill sandwich until cheese has melted, about 2 to 3 minutes. Makes 4.
