4 slices white or wheat bread 1/2 cup light mayonnaise (I use Honey mustard) lettuce leaves 1 tomato, thinly sliced 8 slices turkey bacon 4 slices Cheddar cheese (reduced fat if you wish)
Cook the bacon according to instructions. Toast the bread slices. Spread a thin layer of mayonnaise on each slice. Layer the bottom slice with lettuce, tomato, turkey bacon, and cheese. Spread another thin layer of mayonnaise on the cheese; repeat layers. Top with second slice of bread. Serve.
Notes: You can layer this anyway you wish. The original recipe called for more cheese, but considering you are using turkey bacon that was adding a lot of extra fat. You can use reduced fat cheese also. I found that the brand name turkey bacon is better, and the "extra" lean was kind of rubbery, but the other was good.
