CREAM OF WHEAT GRIDDLE CAKES 1 1/4 cups all-purpose flour 1 1/2 cups buttermilk 1 egg 1/3 cup instant Cream of Wheat (straight from the package) 1/3 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1/4 cup vegetable oil 1/2 teaspoon salt Combine all ingredients; mix to a batter consistency and allow to rest for 8 to 10 minutes while bringing griddle up to medium-high temperature. Once griddle is hot enough to "bounce" water balls, apply nonstick spray and pour 1/4 cup batter per cake. Watch for bubbles to "clear" as you would do with regular pancakes and turn.
