1/2 Cup Milk 1/2 cup Water 3 Large Eggs 1 Cup all purpose Flour 2 Tbsp Butter melted Non stick spray 2 Tbsp Canola Oil 2 Tbsp Butter Sour Cream or Yogurt topping
Cherry Filling: 1/2 Cup dried cherries 1/4 lb cream cheese room temp 1 tsp vanilla extract or 1/2 scraped vanilla bean 2 Tbsp Sugar or sweetner 1 large egg 1 lb cottage cheese, farmers chees or pot cheese.
Put Milk, water,eggs and flour in blender or food processor until smooth about 10 seconds. Scrape down the sides Add butter and blend for a few more seconds. Refrigertae, covered for 2 hours, or overnight Set a 10" non stick crepe pan over moderately high heat then spray . When pan is hot remove from heat and add 2 Tbsp Batter. Swirl around to coat bottom of pan Cook 1-1 1/2 minutes on light brown. Set on plate continue with the rest of the batter
Place 2 Tbsp Cherry filling in the lower center of the blintza Fold once from bottom and then the two sides Roll up the rest of the way Repeat with remaining Blintzas Heat 1 Tbsp Canola Oil and 1 Tbsp butter in pan In 4 small batches fry blintzas folded side down til golden brown Gently flip to brown other side Top with Yogurt or sour cream.
