This is a dish my Grandmother use to make for us, usually at Easter, Christmas, and since my dad was Jewish, Passover & Hanukah
I hope you enjoy it as much as we did when we were kids.
2 whole eggs/plus 2 egg whites _ Pignolata _
4 tablespoons sugar
4 Tbsp oil
3 Tbsp whiskey
1 Tbsp vinegar
1 tsp vanilla
1 tsp baking powder
1/2 tsp salt
2 cups flour
1 medium jar honey
Beat together whole eggs and whites and sugar
Add oil, vinegar, whiskey, and vanilla and continue to beat.
Add flour, salt, baking powder, and mix to soft dough.( If dough is too sticky to handle,add more flour to make workable.
Knead dough for a few minutes on a lightly floured board,
Let set for about 10 minutes in a covered bowl. When dough is stretchy, cut into small chunks.
Roll dough into strips ,then cut into 1/2 " pieces.
Deep fry until golden brown, drain on paper towels, cool.
Pour honey into a large pot and bring it to a boil, when honey is thinned out, use a scoop to place some honey in a frying pan , ( low temperature)-
Add fried dough,keep stirring until dough is thoroughly covered-
Remove from frying pan onto greased pan or cookie sheet. form mounds. Repeat this process until all dough is used.
If you have extra honey ,pour or spoon on the individual honey mounds.
These can be decorated with little candies.
To pack- cool thoroughly- wrap in plastic or wax paper to freeze.
Place in zip lock bags . These can be kept for months.
