Most tortillas in Australia are made Old El Paso, which I think belongs to Betty Crocker. I was interested to find this company. CHICKEN - EGG TORTILLA CASSEROLE Ingredients 440gms canned(approx.) mild green chillis (in Mexican section) 250gm can(approx.) red enchilada sauce (in Mexican section)(can substitute tomato sauce) 1 cup chicken stock (water can be used) 500gms minced beef 1 medium onion, finely chopped 2 tablespoons butter (optional) 6 hard boiled (Easter) eggs, cut in chunks 1 cup sliced black olives 1/2 teaspoon salt 6 x DIEGO'S or GRINGOS white corn tortillas 2 cups tasty cheese grated 1/4 cup parmesan cheese grated Preparation Heat first 3 ingredients in a sauce pan. In fry pan sauté onions in butter, salt and crumble meat and brown. Gently fold in eggs, olives and 1/2 cup of the sauce. Place 3 tortillas in bottom of 3 litre casserole. Top with 1/2 meat mixture 1/2 tasty cheese, repeat, top with tasty cheese and parmesan, pour remaining sauce over all. Bake 25-30 minutes at 180C.

MEXICAN LASAGNA
This hearty dish uses tortillas in place of lasagna noodles; also the sauce is a little zingier than regular lasagna.
Ingredients
2/3k minced beef 1 package taco seasoning mix 1 cup diced tomatoes, fresh or canned 2 cups tomato puree 1/2 cup diced green chilli pepper (mild) 1 cup ricotta cheese 1 egg 9 DIEGO'S or GRINGOS White Corn Tortillas 1 1/2 cups mild cheese, grated
Preparation Brown minced beef until crumbly, drain fat. Add taco seasoning, tomatoes, tomato sauce and chiles. Bring to a boil, reduce heat and simmer, uncovered, 10 minutes. Combine ricotta cheese and eggs. In bottom of baking dish, about 32cm x 23cm x 5cm, spread 1/2 of meat mixture. Top with 1/2 of tortillas, cut to fit. Spread 1/2 ricotta cheese and egg mixture over tortillas and top with 1/2 of grated cheese. Repeat once more, ending with grated cheese. Bake in 180c oven 20 to 30 minutes. Let stand 10 minutes before cutting in to squares. Makes 8 servings. This can be make ahead and refrigerated. Add 10 to 15 minutes to the baking time. Or, freeze and defrost before baking.
