Winter Porridge with Grilled Pear and PistachiosPreparation: 5 minutes Cooking: 6 minutes Serves 2 Ingredients for the Maple Pears: 1 1/3 cups rolled oats 2 cups water 1 cup milk 2 tablespoons sultanas (golden raisins?) For the pears: 1 pear, cut into 5mm slices vertically –Beurre Bosc (brown) 1 teaspoon brown sugar 2 tablespoons shelled, chopped pistachios extra brown sugar and milk to serve Method Place the oats, water and milk in a small saucepan. Cook over a medium hear, while stirring, for 6-7 minutes or until cooked. Stir through the sultanas. For the pears: Heat the grill and line a grill tray with foil. Arrange the pear slices on the foil in a single layer. Sprinkle with the brown sugar and grill for 5-6 minutes or until the sugar bubbles. Spoon the porridge into 2 bowls, top with slices of pear and sprinkle with the pistachios. Serve with extra brown sugar and drizzled with milk if desired.
