Moroccan spiced bean dip400g can cannellini beans 1 large clove garlic 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon hot smoked paprika 4 anchovies ¼ cup natural unsweetened low-fat yoghurt 1 tablespoon lemon juice Freshly ground black pepper 1 tablespoon chopped parsley Drain beans and mash roughly. Crush garlic, peel and chop finely. Heat a non-stick pan and toss garlic, cumin, coriander and paprika together for one minute or until spices smell fragrant. Remove from heat. Chop anchovies roughly and add to pan with yoghurt, lemon juice, pepper and parsley. Stir into beans and combine. Serve with vegetable crudités or fresh bread.
