Root Beer Glaze
1 C. root beer (room temperature)
1/2 C. brown sugar
1/4 C. ketchup
1 T. Dijon mustard
In medium saucepan, whisk together ingredients. Bring to boil; reduce heat to medium.
Cook, uncovered until mixture reduces in half (about
15-20 minutes) stirring occasionally.
Divide glaze and brush half on ham prior to baking. Brush remaining glaze on ham just as it comes out of
the oven.
Makes about 1 1/3 C.
NOTE: For a lighter flavor, offer glaze in a side dish at the dinner table for guests to flavor to their taste.

Port and Peppercorn Cream Sauce
2 T. butter
1/2 C. chopped shallots
1 C. port wine
1 C. chicken broth
1/2 tsp. coarsely ground black pepper
1 bay leaf
1/2 tsp. dried thyme leaves
1/3 C. heavy whipping cream
In medium skillet, melt butter over medium heat.
Stir in shallots.
Cook and stir until shallots are translucent (about 5 minutes).
Stir in wine, broth, black pepper, bay leaf and thyme. Bring to boil; reduce heat to simmer.
Cook, uncovered until mixture reduces in half (about 15 minutes).
Remove bay leaf.
Stir in cream; bring to a boil.
Reduce heat;simmer for 3 minutes.
Remove from heat and pour into blender container,
cover with lid, and remove the center part of the lid. Place a paper towel over center hole.
Pulse until smooth.
Serve with heated fully cooked ham.
Makes about 1 1/3 C. sauce.

Creamy Dijon Mustard Sauce
2/3 C. sour cream
2/3 C. mayonnaise
1/3 C. chopped green onion
3 T. Dijon mustard
In medium bowl, stir together ingredients.
Serve with fully cooked ham.
Great served with ham sandwiches, too.
Makes about 1 1/2 C. sauce.

Hoisin-Sesame Plum Glaze
1 C. red plum jam
2 T. soy sauce
2 tsp. hoisin sauce
2 tsp. chopped green onion
2 tsp. sesame oil
1/2 tsp. grated fresh ginger
In a microwave-safe 2-C. glass measuring cup or bowl, whisk together ingredients.
Microwave on HIGH 1 1/2-2 minutes, stirring every 30
seconds.
Brush half of mixture on ham prior to baking.
Brush remaining sauce over ham just as it comes out of the oven.
Makes about 1 1/4 C. glaze.
