Green Tomato Pickles
500g salt 2kg onions 2 cups sugar 1 tsp curry powder 1 tsp cloves 1 tsp allspice 3kg green tomatoes (about 6lb) 1 cup all purpose flour 3 tbs mustard 1 tbs turmeric 2.5 litres vinegar
Make a brine of 500g salt to 5 litres cold water. Cut up vegetables and soak in brine overnight. Next day bring almost to the boil. Strain off brine. Keep 3 cups of brine and mix it with the dry ingredients into a smooth paste. Heat vinegar. When hot, stir in mixed ingredients and vegetables. Bring to boiling point, but do not boil. Bottle in hot sterilised jars.

I made mine with easisauce but this is very close, so I recommend it.
