Peppered Plum and Lemon ChutneyYou need: 60 gm butter 2 medium onions, finely chopped 2 garlic cloves, finely chopped 2 tsp crushed black pepper 2 tsp mustard seeds 1 kg plums 400 gm tomatoes, peeled 1 tbsp lemon rind, grated 2 cups brown sugar 2½ cups brown malt vinegar Method: Melt butter in large saucepan, add onions, garlic, pepper, ginger and mustard seeds, cook gently until fragrant. Add remaining ingredients, stir over heat without boiling until sugar is dissolved. Simmer, uncovered for about an hour until mixture thickens. www.abc.net.au/adelaide/stories/s1618441.htm
