I'm not big on clams but for those who are enjoy!
1 cup clams, drained (if canned) and chopped 1 cup finely chopped cooked potato 1 green bell pepper, chopped ½ onion, chopped 4 ounces pre cooked ham, chopped 4 cloves Caramelized Garlic 4 eggs, lightly beaten 1 cup half and half, or non fat half and half 1 tsp Tabasco 1 tsp dried thyme Freshly ground black pepper 2 Tbsp melted margarine 1 C finely crushed soda crackers.
Pre heat oven to 350°F. Heat a sauté pan. Add olive oil and lightly sauté bell pepper, onion, and cooked ham. Remove from heat. In a medium bowl combine the clams, potato, green pepper, onion, ham and garlic. In a separate bowl, mix the eggs with the half and half, Tabasco, thyme, and black pepper. Spread the melted margarine evenly in the bottom of a 9 inch pie plate or oven proof casserole and top with cracker crumbs. Spread the clam mixture evenly over the cracker crumbs and pour in the egg mixture. Bake for 20-25 minutes until mixture until id done. The clam pie is ready when a small knife or toothpick is inserted into the pie and comes out clean.
