2 pounds baby shrimp 3 Tbsp butter 1 cup onions, chopped coarsely 1 cup green pepper, chopped 1 cup zucchini, chopped 1 cup celery, chopped 2 cloves garlic, pressed 4 large tomatoes, chopped 8 ounce) tomato sauce 1/2 tsp pepper 2 tsp fresh lemon peel, shredded 1/16 tsp cloves 1 bay leaf 1 tsp thyme 1 tsp honey 3 Tbsp parsley
In a large saucepan, saute the onion, green pepper, zucchini, and celery until tender in the butter. Add the garlic and tomatoes, bring the mixture to a boil. Reduce the heat and add the tomato sauce, pepper, lemon peel, cloves, bay, thyme, and honey. Simmer for 15 to 20 minutes, stirring often. Stir in the shrimp and heat thoroughly. Serve over hot rice. Add hot pepper sauce if desired
